So easy to make and the ingredients I can easily find in my kitchen. I gree that it is a good base muffin recipe. Added chocolate chips in the batter and it tasted yummy.

I agree with the others. A good base recipe that you can add just about anything to. Easy to do and it tastes good... it's just not a 'wow' recipe that gets 5 stars from me.

This is a great versatile recipe to have on hand. They would be very plain and bland as written, but are meant as a base recipe for you to be creative with. I made the batter and added blueberries (tossed in flour to prevent sinking) to 1/3 of the batch, and lemon zest and poppy seeds to the other 1/3 and strawberry jam in the middle of the other 1/3 to feed a crowd with differing tastes. People thought I spent hours in the kitchen whipping up different varieties of muffins... and it only took about 20 min to whip up all the batches. (fooled them!) I may try using melted butter next time in place of the oil to give these muffins a richer taste. Will also add some vanilla, almond or maple extract to add some flavor. Overall great recipe that bakes up well, but just requires some creativity to personalize- have fun!

You can't beat the flexibility of this dish. Best ever might be a stretch...but its a good one to memorize and whip up with anything.

this is great! I made this recipe into a breakfast bread rather than muffins and it is divine. I love a recipe that is flexible and uses simple ingredients that I always have on hand. This one certainly fits the bill. If you want to add some easy flavor just put in your choice of extract. I put in some lemon and this was delish! I have another loaf of blueberry bread in the oven right now. No one can hardly wait til breakfast!

This is a great, basic recipe with so much room to substitute and add to, as desired. I used about half wheat flour and apple sauce instead of oil. I then made a batch with a cup of coconut, a cup of crushed pineapple and a maraschino cherry cut into four to make a pina colada muffin... it was great! The batch of blueberry muffins were awesome, too. Thanks for such a great base recipe!

I love how easy this recipe is and how much room there is to experiment. I used half white and half brown sugar, added cinnamon and nutmeg and fresh blueberries. Sprinkled cinnamon sugar on top before baking too. Make sure to coat the blueberries in flour before you add them to the batter so that the batter doesn't turn that awful blueish green color. I also had to substitute rice milk for the regular milk due to a whey allergy but it works fine and is lower in fat. I'm looking forward to making these muffins again and trying different variations such as whole wheat flour, wheat germ, apples and walnuts, maybe carrot raisin or banana berry. Thanks for sharing..everyone can make great muffins using this recipe!

My husband told me they are so good, he loves them. That's unusual because he's very picky. I only changed one thing: added 1/2 cup fat free milk and 3/4 cups applesauce to replace the oil. Also, threw in a little flax meal for a health boost. They're really yummy with fresh bluberries and not too sweet.

it was good , fast and easy . the good thing about it that I can satisfy every one in my family by one recipe , I can divide the batter and mix each part with different fruits and spices according do every one . my favorite is adding 2 cups of shredded carrots + 1 cup of raisins + 1 tbs cinnamon. the next time I`ll add some coconut . I think the sugar amount is good, not too sweet or too bland.

Wonderful base recipe! I'm in the process of moving and had some leftover baking supplies around so I threw the following substitutions in: 1/4 cup honey, 1/4 cup white sugar, and 1/4 cup brown sugar. 1 1/2 cups white flour and 1/2 cup whole wheat flour. 1/2 cup chocolate chips, 1/2 cup dried cherries, substituted 4oz applesauce for the oil (they are a mite bit dry, so next time maybe oil will work better), and added a mashed banana in. YUM.

Great recipe! I will never buy boxed muffin mix again. I added 1/4 cup sourcream, 3/4 cup mashed bananas, 1/3 cup oatmeal, 1/3 cup chopped walnuts, and vanilla with a pinch of spice. Came out moist and yummy. Can't wait to try many other varieties. And hint try to avoid a dark coated pan if able.

I made these as mini muffins with 1 c. chocolate chips and cooked them for 12 1/2 minutes. They were ok. I wouldn't say the best ever though. A recipe I made in home ec in middle school actually was a little better. Guess I will just stick with that one until I find a better one.

I have made these two times (once in my older oven and today in my brand new oven) and followed the recipe exactly: both batches were burned on the bottom. I would definetly check on the muffins around the 15 min. mark.

This is an excellent easy to follow recipe. I added a tsp of vanilla per batch. I doubled the recipe and made exactly 24 muffins. It is not too sweet which makes it easily altered either savory or more sweet. Thanks for sharing this recipe!

I've tried a couple basic muffin recipes from the site and this is my favorite. I just made a double batch and made two different kinds. In one batch I put a dollop of raspberry preserves in the middle of the muffin before baking and sprinkled a few choc chips on top. Yum. The other half I put two mashed bananas and some cinnamon and baked it in a cake pan and just baked it a little longer. Turned out wonderful. Thanks for the recipe Lori!
