2 eggs
2/3 cup milk
3 slices bread, torn
1/2 cup chopped onion
1/2 cup grated carrot
1 cup shredded Cheddar or mozzarella cheese
1 tablespoon minced fresh parsley
1 teaspoon dried basil, thyme or sage (optional)
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 pounds lean ground beef
TOPPING:
1/2 cup tomato sauce
1/2 cup packed brown sugar
1 teaspoon prepared mustard

DIRECTIONS
In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in the onion, carrot, cheese and seasonings. Crumble beef over mixture and mix well.
Shape into a 7-1/2-in. x 3-1/2-in. x 2-1/2-in. loaf in a shallow baking pan. Bake, uncovered, at 350 degrees F for 45 minutes.
Combine the topping ingredients; spoon half of the mixture over meat loaf. Bake 30 minutes longer or until meat is no longer pink and a meat thermometer reads 160 degrees F, occasionally spooning remaining topping over loaf. Let stand 10 minutes before serving.

This was a good, solid old-fashioned meatloaf recipe. I really liked the grated carrot in it, and the onion gave a lot of flavor. I used three slices of soft white bread, just rubbed them between my hands until they basically fell apart into fine crumbs. My only addition was some worcestershire sauce in both the meat and the sauce. I didn't really care for the sauce, it was too sweet for my taste, in spite of adding extra mustard and worcestershire. Great meatloaf though!

This was a delicious meatload although the topping was alittle too sweet I will cut the sugar next time also I used 1 grated yellow pepper instead of carrots It was great!!!

this recipe was fantastic, best meatloaf ever, all i added was soy sauce, Worcestershire sauce, and tomato sauce and sugar, about two tbs, inside the actual meat loaf. and cut down the milk used to 1/3rd cup and add one extra slice bread

Very Good! I used breadcrumbs (and reduced the milk to about 2 tbsp) instead of the torn bread. We LOVED the addition of the grated carrots and the cheese. Thanks for sharing. :)
