This was absolutely the best meatloaf I have ever made, or had for that matter, in my life. I highly recommend it. The savory sweet glaze is fantastic! My whole crew normally puts ketchup on everything. Not one of them reached for it!! Amazing!
I thought there were too many onions for the amount of meat used. And I had to drain a lot of water out of the pan after 75 minutes, then put it back in the oven for another 10 minutes. I also didn't care for the added sweetness from the shredded carrots. The overall taste was fine. I think it would be great with less onions and no carrots.
I've always found meat loaf bland and a hard sell at my dinner table, until I found this recipe. It's been my stand-by for a couple of years now. Thanks Matt!
I used a pound of meat instead of the 1 1/2 pounds called kept everything the same other than the bread it still turned out great! Glaze on top was perfect texture!
I added oregano, basil and fennel seed. Very tasty.

I've tried different meatloaf recipes on my 12 year old son over the years with no success...until this one! He loved it and very nearly ate the whole thing in one sitting. I didn't have any carrots or onions in the house and it was still fantastic. Recommend using 3 slices of bread as the recipe calls for, not dried bread crumbs and plan your meal sides timing for 1-1/2 hour cooking time (center not up to temp at 1 hour or even 1-1/4 hours).
