Yum! I followed suggestions to mash instead of puree, to use a sweet yellow onion, and to substitute butter for the margarine. I had no chicken broth, so used beef broth instead, plus a pinch of salt. The soup was really flavorful and had a nice texture. We get a lot of broccoli in our CSA veggie box, so I'm sure this will become a favorite recipe!

Okay, so this recipe as is came out more like a broccoli stew than cream of broccoli soup. (Way too much broccoli for my taste.) I would probably cut the broccoli by 2-4 cups, just to get it creamier. Hints: 1) Use chopped broccoli - it cooks faster. 2) DEFINITELY sprinkle Parmesan cheese on top (to taste) - it really adds something. 3) It tastes better the second day. Once I cut back on the broccoli, I'm sure this will be five stars.

This IS the best cream of broccoli soup! No piles of cheese or other high-fat dairy products here. I substituted out 1 cup of the milk for more high-quality vegetable stock, and doubled up the roux to make the soup thicker. Fabulous! Thanks!

This is FABULOUS. Even my pickiest family members loved it. I dont put it in a blender, though, I just mash it a bit bc I like it chunkier.

We made a huge pot of this (quadrupled the recipe) and added potato (peeled, diced, and boiled separately until soft) and ham (diced). Then we served with shredded cheese on top to several families from our church. It made a delicious meal.

This was basically broccoli puree. Bland beyond belief. Needs seasoning. I'm a wonderful cook so I know it was the recipe & not my cooking. Don't bother with this one.

Delicious! I didn't use celery but I added 2 cloves of garlic when sauteing the onions. I used a hand blender to blend the soup, but I only blended a third of it so because I wanted to leave bits of broccoli intact. I added about a tsp of salt, pepper and a half tsp of chili powder and flakes. Next time I'll set aside broccoli florets to add at the end. Great recipe. I'll definitely make this again.

This recipe is great!! Iused another member's suggestion and used stems, leaves, etc. Also, I always use Minor's chicken soup starter and like another member added a little nutmeg.

I used 14oz bag of chopped broccoli and a 16oz bag of cut broccoli, along with more broth and milk. turned out great

This is sooo good and easy. I did saute the broccoli stalks with the other veggies and then pureed them together then added the broth and broccoli florets. Then I used the potato masher to break them up. I even made extra and froze the base without the milk for an even faster soup.

This Soup was just delicious.My family loved it.I used 1 1/2 cup of milk and 1 cup of Half And Half milk. I added 2 slices Velvetta Cheese to the sauce.Next time I will use Sharp Cheddar Cheese.I can't wait to eat this soup for dinner.I will be making this again.Its best to mix the flour and milk in a seperate pan.I didn't puree the Broccoli as the recipe stated.I like the Broccoli to be chunky.I cant wait to eat a bowl of soup for dinner.

Excellent! Just substituted butter for margarine & added shredded carrots at the end for a bit of crunch and color. It turned out great. Just as good as the cream of brocolli soup in restaurants. Yum!

Yum! We love this. We both agreed that whole pieces of broccoli were definitely in order, so I only pureed about half the broth/broccoli mixture. Also, I had some heavy cream to use up, so I used 1 cup along with 1 cup of milk. We threw in parmesan when it was nearly done cooking.

Used 1/2 an onion, didn't use celery. Soup turned out great when a cold front moved through on a Saturday afternoon. We went to a city "WinterFest" where they bring in a truck that blows snow, made of bags of ice. Y'all up north are probably laughing, but here in the tropics of Houston, it's a novelty! Anyway, I used a 1/2 pint of whipping cream for 1 cup of the milk, and 1 cup of whole milk for the rest. Needed some salt, and I also added about a cup of shredded cheddar and a piece of provolone as it simmered. Used potato masher as per other reviews, and left some big chunks for flavor. The "picky" kid ate his whole bowl! Will keep. Thanks for posting!

Yummm :) Did not change a thing and everyone enjoyed this from my hubby to my 11mo old. She really ate this up! Loved the bacon addition suggestion. I put some bread in the oven with butter and garlic salt just as a treat and used it to soak the bottom of the bowl. I will make this often. Great recipe.

Oh my stars this was awesome!! I always read through the comments before i try a recipe so i tried a few tweaks! I didn't have a potato masher so i just took out some stalks of the broccoli and used my hand mixer and i also added a couple of potatoes and it turned out fantastic, nice and thick. I added some cheddar cheese just before serving and i also like to put some cheezit crackers in too!

Wonderful soup! Thanks for sharing, I didn't have celery on hand, but I didn't miss it. I went to souplantation recently and they had a similar soup so I searched and found this recipe, which I actually prefer! Will make this recipe regularly! Also, French's fried onions are a delicious topper.
