i have made this recipe for years and everyone loves it. Better than any jarred brand. it's easy and no need to buy pickling spice. But the ingredients are off, esp. the salt. For one can of drained beets, use 1/3 cup sugar,2 tsp. starch, 1/3 cup vinegar, 1/4 tsp vanilla, 8 whole cloves, 1 TB catsup, 1TB oil, dash salt, 1/2 cup beet juice. Mix it all together and cook over medium heat for 3 minutes. I don't even strain it, it gets better over time and keeps in the fridge forever. Just keep adding beets as you use them, until it tastes "off."

Salty, bitter, and it ruined 3 cans of beets. I would not suggest this to anyone. I did not care for this recipe.
