Lovely. my second trial for carrot cake. I've made a couple of changes. 1) i used only half recipe; 2) i only used 1tsp cinnamon, 1/2 tsp allspice, 1/2 tsp ginger powder; 3) i omitted the nuts; 4) i didn't use crushed pineapple, but i chopped off 1 big pineapple, squeezed out the juice and give it to my husband; 5) i squeezed the carrot to almost dry only and i didn't bother leaving it for an hour with the sugar. baked it for an hour, and frosted it cream cheese frosting II from this website. it was a hit. together with my Japanese cheesecake, it was gone within seconds from the dessert table. everyone said that this is the best carrot cake they ever had.
