Berry Lemon Mousse Parfait

INGREDIENTS

  • 1 1/2 cups heavy cream
  • 1/2 cup sugar, divided
  • 1/4 cup lemon juice
  • 1 teaspoon McCormick® Pure Lemon Extract
  • 1 teaspoon McCormick® Pure Vanilla Extract
  • 1 cup sliced strawberries
  • 1 cup fresh blueberries

DIRECTIONS

  1. In a large, chilled mixing bowl, using an electric mixer, beat cream, 1/3 cup sugar, lemon juice and extracts until mixture mounds softly.
  2. In a small bowl, add remaining sugar to berries. Mix gently.
  3. Spoon layers of mousse and fruit into dessert dishes. Serve immediately or chill for several hours before serving.

This is to die for! Delicious and easy. The perfect topping for fresh fruit! I think I'll add cubed pound cake in addition to the fruit next time!

I made this for the valentine dinner dessert last year and it got rave reviews from my husband (who is a stiff critic). I passed the recipe to my mother, who used frozen blueberries instead of fresh, and made it in advance. Her blueberries ran, and I think it messed up the consistency, so I would stick w/ fresh berries as the recipie reads.

This is absolutely delicious! I don't like desserts that are TOO sweet, so this is right up my alley. Instead of heavy cream and sugar, I just used Cool Whip mixed with the zest of one lemon, plus a little fresh lemon juice, then put in the freezer for about 2-3 hours. I have even tried sprinkling the top with chopped pecans. Light and yummy, and my guests always love it!
