I scaled this recipe down to three people and still had lots of dressing left over. Two pounds of spinach is a lot so I just plated out enough for three servings added one egg for each person and then drizzled the amount of dressing I thought was appropriate; the rest I'll save for my salad tomorrow. I can see using this dressing on a spring mix salad also. The dressing is what makes this salad so good. I have made this a few times now and still love it today I added fresh local strawberries halfed and some slice red onion OMG I loved loved loved it this way! Thanks for a great recipe.

This was fantastic! I used baby portabellas and sea salt/black pepper croutons. The dressing was perfect and I had enough left to make another salad the next day. Absolutely wonderful and easy!!!

Soo good. My whole family loved it, and we're really not even salad people. I put it all in the blender so that I could get the full flavor of the onion. Also, I love sweet things but the sugar was a bit much. I'll defintiely decrease it a tad next time.

I'm not usually a fan of salad dressing, but we loved the dressing that goes on this salad! Since the first time making this recipe, we have made a second batch of dressing to top salads that come with our pizza and other take out food!

This was salad is wonderful!! I made the recipe exactly as stated. I would not change a thing. I found real bacon bits that were already prepared so that cut down on the prep time. My 3 year old. Had alot of fun making the dressing. She ate the salad and the salmon that we ate it with. She even put the dressing over the salmon. She kept saying, "mommy this is so tasty!!"

I used what I had on hand for the dressing - green onions and jalapeno-cilantro dipping oil - which gave the dressing some extra kick.

This salad was terrific! However, I forgot to add the sugar to the dressing and I'm so happy that I forgot. I think it would have been way too sweet with it. Also, didn't have mushrooms so I added English cucumbers and tomatoes and used a Spanish Sweet Onion. I will 100% make this again!!! Everyone LOVED IT!

Excellent recipe! The sweet dressing compliments the smoky bacon, eggs, and spinach soo well! Unlike other reviewers, I feel that the dressing ought to be made in a blender or food processor as stated to achieve the proper consistency: shaking in a bottle or jar doesn't puree the chopped onions into the dressing as the recipe obviously indicates should be done. A better emulsification is also possible in the blender or food processor. I used the small food processor attachment for my stick blender and made half a batch of dressing; it turned out beautifully! I added halved cherry tomatoes to this salad and made my own garlic croutons (from this site), and we made a supper of it. Yummy!

Awesome. My 'new dish' for social gatherings that's so far been a hit:) i love black beans and garlic, so i added those. i'm all about turkey bacon than regular and it works fab. yum thank u!

We made this for our project on Bermuda at our International Day Fair and it was a hit! Due to dietary restrictions I used vegetarian bacon and agave instead of sugar. The recipe was delicious. I have never seen my kids so eager to eat more spinach! For that alone, I would give it more stars if I could. This is definitely a keeper!

This was really good. When I first tasted the dressing, I thought the onion was a little over powering but once it was tossed with the salad it was much more balanced. I'll be making this again.

This is one of the best salads I've ever had! (didn't use mushrooms) Only used one big bag of spinach and modified some of the other ingredient measurements, and ended up using half the dressing, but it came out excellent! The dressing is wonderful.

Love love love this salad - cut back the oil and mixed the sugar with part sugar part splenda. Omitted the croutons the second time I made a batch - didn't feel like they added much. I left pretty much everthing seperate until the morning when I assembled it for my lunch and left teh dressing seperate until I actually was ready to eat it to avoid the soggy factor. It was fabulous and I'm making it again for this week.

I love this salad ! Love it ! I hate eggs so I have it without the eggs. Cynjne has it with the eggs. she preps the eggs and adds them to her portion. You have to shake the dressing as it is passed around, but it is worth it. A very good salad. DO NOT SKIP THE CELERY SEED !!!

If I was served this salad at a restaurant I would go back just to have it again. It is way beyond delicious. We were licking our fingers. I made my own croutons and used slightly less onion which was finely chopped (I used a red onion). While I was grocery shopping today I noticed spinach on sale. I bought two bags and I'm looking forward to having it this week. Ingredients for both the salad and the dressing are perfect. I wouldn't change a thing. Thanks so much for sharing this wonderful recipe.
