INGREDIENTS
2 1/4 cups uncooked penne or medium tube pasta
3/4 cup chopped onion
1 tablespoon olive oil
3 garlic cloves, minced
1 cup chopped sweet red pepper
1 cup chopped green pepper
1/4 cup sliced ripe olives
1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/4 cup water
1/2 cup crumbled feta cheese

DIRECTIONS
Cook pasta according to package directions. In a nonstick skillet, saute onion in oil for 1-1/2 minutes. Add garlic; cook 30 seconds longer. Add the sweet peppers; cook and stir for 2-3 minutes or until vegetables are tender. Stir in the olives, oregano, salt and cayenne. Add water; cook and stir until mixture comes to a boil. Drain pasta and stir into skillet. Remove from the heat. Stir in cheese. Serve immediately.

Nutritional Analysis: One serving (1-1/4 cups) equals 274 calories, 9 g fat (4 g saturated fat), 17 mg cholesterol, 434 mg sodium, 40 g carbohydrate, 4 g fiber, 9 g protein. Diabetic Exchanges: 2 starch, 2 vegetable, 1-1/2 fat.

Great low-cal recipe! I used green olives (instead of the black it shows in the picture) and it turned out great.

Even my boyfriend (a major carnivore) loves this! It has worked it's way into our regular menu. I think it'd also be good with grilled chicken. I tried another noodle but I think penne is best. Also, I don't use any water with the peppers so they are crisper and I don't like feta so I use an Italian cheese blend.

This was a quick, easy and colourful dish which my daughter loved. You can't ask for much more than that. The cayenne pepper was what made this special for her. She told me you can make this again soon. Thanks.

It was easy to make and looked pretty. However, it lacked a little in flavour. Maybe adding some lemon juices and/or zest and some more herbs, like basil, for instance, would pick it up a bit.

*******superb! My fiance and I like things spicy, so we added 1/2 teaspoon of cayenne pepper. The olives and feta made this dish an explosion of flavour in your mouth! My fiance is Italian and very big on pasta, so this passed his test! Yay!!! P.S. It is a very quick dish to prepare:)

Soooooooooo goooooood. I absolutely loved this, so did the kids and DH. This was tasty, easy, and healthier than what I normally fix. I will be making this a lot -- especially this summer!

We loved this recipe! I used all red peppers (no green), 4 cloves garlic, kalamata olives, and julienned sundried tomatoes. SUPER!
