I had a similar salad in Wolfgang Puck's restaurant in Las Vegas where he used pistachios. I will use them when I make this again.
I roasted the beets, adding in some oil and balsamic vinegar, as described by previous reviewers (thank you!). I had only fresh baby spinach, and that was a perfect green for this. Finally, I had only fresh orange juice, so I boiled it down for the dressing and it was perfect.
Many raves for this salad, I will certainly serve it again.
