The main appeal of this recipe is its versatility- instead of using milk, you can use whatever fizzy drink you have on hand, and its flexibility- being able to have a range of flavours depending on what you used.
I used a natural ginger beer and added cinnamon, cassia, nutmeg and ginger to make them spicy. The edges went lovely and crispy, almost caramelised.
Because milk is more healthy than fizzy drink, I wouldn't use this recipe again unless I was tweaking it for a Vegan or had no milk and had a craving.
I really warn against substituting low calorie, healthy milk for pop or beer. But then again, pancakes aren't health food!
