Directions

  1. Combine sweet potatoes, onion and taco seasoning in large nonstick skillet over medium heat. Add water. Cover and cook 8 to 10 minutes or until crisp-tender and water has almost evaporated, stirring once. Stir in oil; continue cooking, uncovered, 4 to 6 minutes or until potatoes are tender and begin to brown, stirring occasionally.
  2. Meanwhile, combine sour cream and hot sauce in small bowl. Set aside.
  3. Add beef to potato mixture. Continue to cook 5 minutes or until beef is heated through, stirring occasionally, adding 1 to 2 tablespoons water, if needed to avoid sticking.
  4. Garnish with cilantro, as desired. Serve with sour cream mixture.

  • Cook's Tip: 1-1/2 teaspoons each cumin and chili powder may be substituted for taco seasoning.

  • Beef and Egg Sweet Potato Hash: Prepare recipe as directed. Top hash with egg, prepared as desired. Garnish with cilantro and serve with sour cream mixture.

I have to admit that I was a little skeptical about the combination of beef, sweet potatoes and taco seasoning, but they actually work very well together. My husband said he would have preferred this without the tortillas so in the future I will serve it without.

This was a delicious meal that had great flavor and was very easy to prepare. The carmelized onions and sweet potatoes combined with the beef was just a perfect taste combination.

Very good! Also added sliced avocado to the tortillas. Excellent way to use leftover steak! I think it would be good with any kind of potato.

This is really good! I didn't have leftover beef so I cut a 12 ounce steak into cubes and cooked it along with the sweet potatoes and onions. Really delicious and unusual.
