INGREDIENTS
1 cup uncooked brown rice
1 pound ground beef
1 medium onion, chopped
1 (28 ounce) can stewed tomatoes
1 teaspoon celery salt
1 teaspoon salt
1 teaspoon honey
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese

DIRECTIONS
Cook rice according to package directions. Meanwhile, in a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomatoes, seasonings and rice. Transfer to a greased 2-qt. baking dish. Cover and bake at 350°: for 50-55 minutes. Sprinkle with cheese. Bake, uncovered, 5-10 minutes longer or until cheese is melted.
FOOTNOTE
Using instant brown rice in Beef Spanish Rice recipe cuts down on the cooking time. Try substituting cheddar cheese with a more mild Monterey Jack Cheese.

I tried the other beefy spanish rice and was disappointed but not with this one. I did add some sausage when I browned the beef but I stuck to the rest of the recipe and it was excellent. I have a cousin who abhors any type of tomatoe and could not help but take a small taste because everyone else was raving about it. Lets just say he asks me to make this everytime we are near a stove. No leftovers!

This recipe was good but I did change it a bit. I added one large green bell pepper and one small red bell pepper. Also, I added about .5 lb of spicy ground sausage. I also changed the rice amount to 3 cups because I didn't think there was enough rice for my family of 5 with only 1 cup.

Made this using Minute Rice and it came together in no time at all. I did omit the honey, added a chopped green bell pepper and used real garlic as opposed to garlic salt. Also threw in some chili powder and cumin. Went well with the enchiladas I served, thanks!

This was a good recipe! My family really enjoyed it. I used instant white rice to make it quicker. I think next time I will try adding some black beans and/or corn for a more Spanish feel. An all around good dish!

Very Good. Didn't add the honey. The only tomatoes I had were canned tomatoes/okra/corn which really added to it.Also added some Chili Pepper and salsato make it more "Spanish". Has a lot of possibilities

I used ground turkey instead of ground beef and I didn't have the celery or garlic salt so I substituted with garlic powder.I did add green bell peppers to the recipe as well. It turned out great and I will definitly make again.

This is a nice easy meal and I liked it. I did change a couple of things. I didn't have honey, so I used brown sugar. Also, I used fresh garlic rather than garlic salt. It tasted quite nice but, I think if I make it again I'll add a chopped green pepper for a little extra flavor. Thanks for the recipe!
