This was good! My husband, the picky eater, even went for seconds, so I knew it was a hit.
I used the large hash browns (Cavendish Farms Chunky Diced Potatoes). I omitted the oil, and just lightly coated my casserole dish with cooking spray. I seasoned the hash browns with Club House Italiano Seasoning and increased the initial cook time for the potatoes to 30 minutes.
Instead of frozen mixed vegetables, I used 1/2 cup of chopped yellow pepper, 1/2 cup of chopped red pepper and 1 cup green beans. This not only tasted good, but made the dish very colorful!
I may double the sauce the next time, as I found there wasn't enough for the potatoes.
The leftovers were even better! This will definitely make it to our table again! Thanks for the recipe!
