Beefy Barbecue Macaroni

INGREDIENTS

  • 3/4 pound ground beef
  • 1/2 cup chopped onion
  • 3 garlic cloves, minced
  • 3 1/2 cups cooked elbow macaroni
  • 3/4 cup barbeque sauce
  • 1/4 teaspoon pepper
  • 1 dash cayenne pepper
  • 1/4 cup milk
  • 1 tablespoon butter or margarine
  • 1 cup shredded sharp Cheddar cheese
  • Additional Cheddar cheese (optional)

DIRECTIONS

  1. In a skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add macaroni, barbecue sauce, pepper and cayenne; mix well. In a saucepan, heat milk and butter over medium heat until butter is melted. Stir in cheese until melted. Pour over the macaroni mixture and mix gently. Sprinkle with cheese if desired.

This recipe seemed to be lacking something, like vegetables. I have a similar recipe which adds corn and tomatoes, and it is much better, though still not great. The cheese didn't add much to the dish, because there was just not enough of it and it was mixed throughout. You really couldn't taste it. I think sprinkling a bunch on top and baking/broiling a few minutes would have been much better (although would add more work since this is a stovetop recipe).

I wasn't too sure about adding BBQ sauce to noodles and meat, but I was pleasantly surprised. It was really good! The only ingredient I added was a diced sweet pepper and I chose to follow the suggestions of some of the other reviews and did not make the cheese sauce separately. I mixed the butter and milk with the cooked noodles and then added them to the meat. After I mixed the noodles and the meat I added the grated cheese and stirred everything together. Super easy and tasted amazing. I have 4 children and they all liked it. I will definitely make this dish again.

This was very tasty and easy. I don't really see the point of making a "sauce" with the cheese. I think adding the cheese alone would have been just fine. Used a full pound of beef and a little more bbq sauce, as well as about 1.5 cups of frozen corn.
