Ingredients

  • 1 pound ground beef
  • 3 celery ribs, thinly sliced
  • 1 medium onion, chopped
  • 2 cups cooked rice
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped sweet red pepper
  • 1 (4.5 ounce) jar sliced mushrooms, drained
  • 1/2 cup soy sauce
  • 2 tablespoons butter or margarine
  • 1 tablespoon brown sugar
  • 1 (3 ounce) can chow mein noodles

Directions

  1. In a skillet, cook beef, celery and onion until the meat is browned and vegetables are tender; drain. Stir in rice, peppers, mushrooms, soy sauce, butter and brown sugar; heat through. Transfer to a greased 2-qt. baking dish. Cover and bake at 350 degrees F for 25-30 minutes. Sprinkle with chow mein noodles. Bake, uncovered, 5-10 minutes longer or until the noodles are crisp.
