LOVE IT! cheap to make. easy to prepare (I made w/ chicken breast instead of canned chicken) and everybody loved it. make it thick so you can eat it w/ Tortia scoops!

Loved this! We did add a small can of black olives just because they needed to be used. Number of servings is also very accurate with this recipe.

we really enjoyed this soup. I used up left over steak in this and it was even great the next day. I put the beans in with everything at the beginning and only left the rice for last.

I used this recipe as a base to use up left overs in my kitchen. I braised left over ny strip for about an hour. While that was going on, I chopped veggies.. I substituted frozen carrots for raw...steamed them in the MW then cut them. After sauteing onions/ celery, I added carrots and substituted minced garlic (about 1Tbsp). Then I added 1/4 to 1/2 c of red wine, let that cook off for 5 min and added abt 2 cups of tomato sauce (no diced tomato in the house). After 1 hour, I removed the steak from braising, chopped it into bite size pieces, and discarded broth (it had a burnt taste from the grilled steaks). I added it all into the pot with the chicken broth. I then added 2 cups of beef broth. I let it cook another 20 min, then added 1 can of black and 1 can of northern beans. I didn't want to used the white rice to pump up fiber content. Plus I didn't want to add another step to this easy soup. Yum! The leftover fairy strikes again. The red wine (or any wine for that matter) always makes soup pop...FYI.

Excellent recipe! Easy & quick. I added a can of corn for a sweet crunch. Next time I think I'll replace the tomatoes with salsa to make it a little more tangy.
