This was a quick and easy weeknight meal. I used a can of southwestern corn that had black beans, red peppers, and onion in it instead of plain corn. I increased the chili powder (and a hefty pinch of sugar to cut the bitter from the chili powder) to suit our family's tastes and used another half cup of Velveeta shreds. This would haven been bland without my addition of more chili powder and the cornmeal was a bit different in the crunch or grit factor it added. Not sure whether I liked it or not. Tortilla chips would have been better. I simmered this a little instead of prebaking it while I was prepping the biscuits. I baked this for 17 min at 350* and it turned out great. This wasn't anything WOW just basic home cooking. It is very filling. This would be really good for camping. I'll have to remember this recipe. Thanks.

No one liked this. I followed the other reviewers suggestions about the biscuits and baked them first but cornmeal was too much. Other than that, I followed the recipe as written. The flavor was odd making it a hard dish eat.

My husband loved this dish but I thought it was just okay. We followed the directions but added more spices and subbed pinto for kidney beans and veggie crumbles instead of beef. My complaint was that the bottom of the biscuits seemed uncooked or mushy but the only way to avoid that would probably be to cook them separately.

If you don't like mushy biscuits, bake them separately!! I agree with "cookinbug" Otherwise, it is pretty good. I added diced tomatoes as it needed more substance. I would agree that it is on the bland side, but being irish- that was ok!

Zeb and I really liked this one. We would have added more beef and beans just so there was enough for all of the biscuits. Zeb really liked that the biscuits were dusted with cornmeal; he said he liked the softness of the biscuits and the crunchiness of the cornmeal.
