I only gave this 4 stars because it's so delicious that it's not fair that it's so high calorie! My husband loves this dish, we eat it once a week and save extras for his lunch that he shares with his coworkers - they love it too! My favorite part about this recipe is the time the chimis spend in the oven is an opportunity to clean the kitchen, take a shower, or get something else taken care of before dinner starts. Very good, yum yum yum. My thighs love them too. Haha. :)

Great idea putting on the butter & baking instead of frying. These were really yummy! You can put just about anything inside - good way to clean out the fridge.

These were wonderful! I adapted the recipe to be vegetarian - using lentils instead of beef. I also omitted the refried beans and reduced the corn to 1 c. of frozen kernels. Delicious!

This recipes was EXCELLENT!! I made it as listed, and the taste and texture were spot on. Serve with some Spanish rice & you've got yourself a meal! This is a great make-ahead meal too - make the filling, and keep it on hand in the fridge or freezer. When you're ready to make, slap down a few tortillas, open can of beans, fill em up and bake!! DELICIOUS!

awsome.I used 8'' tortillas.They were a little harder to roll but still stayed together.The recipe really makes alot of filling.I easily had enough to roll 20.Don't worry they're great the next day too.
