Beef Spinach Hot Dish

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 (4 ounce) can mushroom stems and pieces, drained
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
  • 1 (10.75 ounce) can condensed cream of celery soup, undiluted
  • 1 cup sour cream
  • 2 cups shredded mozzarella cheese, divided

Directions

  1. In a large skillet, cook beef, onion and garlic over medium heat until the meat is no longer pink; drain. Stir in the mushrooms, salt, oregano and pepper. Add the spinach, soup and sour cream. Stir in half of the mozzarella cheese.
  2. Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350 degrees F for 15 minutes. Sprinkle with the remaining cheese; bake 5 minutes longer or until cheese is melted.
