This was a great recipe base for my household. I used 2# of hamburger and used taco bell taco seasoning as well as a 1/2 cup of salsa with the hamburger mixture. I also added refried beans. Then I used 2 cups of a Mexican blend of cheeses, and layered 2 times. I took out the corn, and the chips, and the other stuff. I was afraid the chips would be soggy, so we used Frito Lay corn chip scoops, and had sour cream and salsa on the side. There wasn't anything left after dinner!! Even my 2 year old tore it up!!

I usually ask my husband to rate new dinners on a scale of 1-10 and he gave this one a 10.5 and said it was probably the best thing I'd ever made. I used Tastefully Simple Corn, Black Bean Salsa, and about 2/3 of a 15oz can of corn. Everything else was the same - it was excellent! He was happy that there were leftovers that he took to work for lunch the next day, he said it reheated well too!

Thank you for a slice of my bf's past. This is the dish from his college days that I have been trying to recreate for several years. I did use Rotel instead of the salsa and Mayo instead of the "salad dressing", but I left the rest of the recipe alone. You made me a hero at dinner tonight.

This recipe is Ok...everyone ate it but no seconds(thats how i know if the family really likes a recipe) It is however easy..I will change a few things and try again!

Good recipe! I made it with the intention of it being a "main dish" but at the end realized it would be better presented as a dip. Took suggestion of others and added red onion to the meat while browning. Overall good recipe and will make again for a party or gathering.

Very good. In San Antonio where I'm from this is made all the time it's called Southwest Caserole (you can do it with chicken too) it's delish. We ALWAYS put corn in our nachos as well, it's a southwest thing.

Very simple to make and tasted good. I followed some other recommendations and used half cup sour cream and half cup mayo, sauteed onion and garlic and added to beef with some black pepper, and added in a can of black beans.

This casserole recipe is GREAT and easy. As others did, I made some alterations (added onions when browning beef, added black beans and cut back a little on the corn, supplemented chili powder with a little over a tablespoon of packaged Taco Seasoning mix, changed Miracle Whip to Mayo/Sour Cream mixture, used a Mexican combo style shredded cheese along w/ some shredded cheddar). YUMMO! I will definitely make this again. THANK YOU!

This was a great recipe. I used taco seasoning instead of chili powder, and sour cream instead of Miracle Whip, and cheddar instead of colby. Even my dad who isn't a huge fan of mexican food had two helpings. Perfect for a quick and easy weeknight meal. UPDATE: I made this a second time and added chopped onions while browning the beef, used a package of taco seasoning per pound of beef, and used a mexican blend of cheeses. These changes gave it much more flavor.

I made a few minor modifications: I used 1/2 c. sour cream and 1/2 c. regular mayo instead of the called for 3/4 c. salad dressing. Instead of the chili powder, I used Tastefully Simple Brand Wahoo Chili Seasoning. I also used the Mexican Style Shredded Cheese. Turned out great. Super easy for a quick dinner!

This recipe turned out good. The kids enjoyed it and want me to make it again. We liked the creaminess of having the miracle whip in the casserole. I doubled the recipe and had no leftovers. Very simple and quick.

After reading the reviews, thought I'd try this. Very tasty, and easy. I did make a couple changes. I used sour cream, about 1 1/2 tsp chili powder and a 15 oz can of corn. I also sauted onion, garlic and green pepper with beef. We thought it was very good. Kids ate it, too!

I tried this recipe but made a few alterations. First, I substituted ground beef with ground turkey. Always a healthier choice. Then I replaced chili powder with 2 tbsp. of taco seasoning. I also reduced the salsa to 1 cup & added 1 can of black beans in with the corn. Instead of 3/4 mayo I used 1/2 cup of sour cream & 1 heaping tbsp. of mayo. Once complete, this was really easy to make and so good! I totally loved it! My husband said it tasted like Nachos Grande. It's also is a good recipe if you have broken up pieces of nacho chips left at the end of a bag. I found the smaller more crumbled up pieces filled it in great. Thanks for the new recipe!

Yum! Subbed taco seasoning for chili powder and sour cream for mayo. Love it. Wish I had thrown in some onion and pepper, but still really good. Hit with the kids! Editing to add: made it a third time today, but had no sour cream and didn't feel like going to store, so I used mayo, even though it still sounds weird to me. But it is just as good! Did a layer of refried beans between the meat and chips layer and threw some green onion, green pepper and leftover corn on top. Yum! Looks pretty too! :)
