I am usually a picky eater and am not a huge fan of Mexican Food.However I loved this recipe!I used can sauce and added a touch of chili powder to give it a kick.

We loved this recipe! i did change it a little though, i used ground turkey in stead of beef and i also did as suggested and put in some taco seasoning. It was great! i will make this again! i served this with some sour cream and spanish rice.

This recipe was a good springboard. I added the garlic and taco seasoning that others suggested. I also added a can of refried beans. I added fresh mushrooms and most of the cheese to the meat/bean mixture. Once the tortillas were filled, I topped with the olives and more mushrooms. I also used canned sauce. The end result was really good. Thanks both for the recipes and reviewer suggestions!

It drives me crazy when someone reviews a recipe but they have changed everything...but I am going to go there...Hubby made these tonight and they were yummy! But..he seasoned the meat with the Taco Seasoning I by Bill Echols from this site. He used 1.5lbs of meat, added 1/2 the cheese and 1/2 can of refried beans to the meat mixture. Pretty much did the the rest the same except for the olives, didn't have any and really didn't miss them. Easy quick and yummy we will be making this again. Thanks for sharing!

Used burrito seasoning when browning the beef & added in some green chilies (about 1 chili in a small can for 2 servings). Served with Spanish rice. This recipe was easy and good. Thanks for the recipe!

I couldn't find a packet of enchilada sauce mix so I had to use canned. But it was actually very good and easier than making the sauce. I made this recipe for a family get together and it was very popular. Would make again.

Followed a suggestion to season ground beef with taco seasoning as it cooked; really helped boost the flavor. Also served with chopped cilantro, diced tomato, and sour cream. Very tasty.

I am giving this recipe a 4 only because it doesnt call for any salt or seasoning in the meat. I put salt and pepper and taco seasoning. I used corn tortillas because that is the only way I eat enchiladas. I liked it that it said to put 1/4 c. of sauce on bottum of pan, but honestly, i wouldn't use packaged sause or canned. I think homemade is the best. For this recipe I used Red Enchillada Sauce, submitted by Sara. My enchilladas smelled so good my neighbor asked what I cooked that smelled so good, and these were a lot of fun to make for me!

Delicious!!! Would season the meat next time, and maybe use chicken or shredded beef instead. Flour Tortillas were fine, I'd try it with corn, but hubby doesn't like corn. We doubled the amount of cheese, we like em' cheesy! Had lettuce, tomatoes and sour cream on top! Oh, and we don't like onions, so we used a tad bit of garlic when browning the meat, but still will need more flavor next time! And there definitely will be a next time!

Not all of us are Mexican. Corn tortillas tend to overpower the whole dish and not all of us care for the flavor. I prefer flour tortillas also and don't think people should judge on authenticity only. Use what you prefer but don't criticize because it's something you don't prefer due to your heritage. There is such a thing as modifying a recipe to suit your needs.
