ground beef (96% lean)
red bell pepper, chopped
onion, finely chopped
ground ancho chile powder
finely chopped fresh cilantro
reduced-fat shredded Mexican cheese blend or shredded Cheddar cheese
spinach or plain flour tortillas (10-inch diameter), warmed
Lime-Cilantro Cream (optional):
fresh lime juice
Everyone in my household enjoyed these. The recipe left off the sour cream for the lime-cilantro cream, but after checking around, I found it was suppose to be 1/2 cup sour cream mixed with the cilantro and lime juice. I doubled the recipe and used extra cheese (we love cheese). This would be really good with potatoes added in as well. :)
Holy cow, silly pun intended Natl. Cattlemen's Beef Assoc., these burritos were delicious! I used hand ground beef sirloin and stayed true to the rest of the recipe. Very tasty, pretty presentation, kid friendly, company worthy, economical meal. The spinach wraps are a must. The lime cilantro cram really gives this dish a nice adult taste. I don't think most kids would like it if they're anything like my grandsons. We would definitely have these again but for our tastes, we'd double the ground seasoning.
