One cup of pearl barley is way too much. 1/2 cups would be better. Otherwise the soup is very tasty and we all enjoyed it.

A very good soup. The extra steps are worth it versus putting it all in the crock pot. The texture overall is more appealing and vibrant. The sugar is a great idea to compliment the tomato. I also threw in 1 tsp of minced garlic. Everyone kept going back for more!

Excellent soup! I had a hard time finding the quick barley, so I used regular barley, which takes forever to cook. But the results were well worth the trouble.

This Soup was easy to prepare and very tasty. I used stew beef (uncooked) about 1.5 lbs. I also used regular barley and cooked the soup with homemade beef broth. I cooked it without vegetables (just meat and broth) for a couple of hours, simmering. I then added the sauteed vegetables and simmered another couple hours. It tasted GREAT!

I used olive oil instead of butter and had about two cups of previously cooked chuck roast that I had in the freezer. I added a four cup carton of Swanson's beef broth, with only two cups of water. I added a Knorr beef bullion cube instead of 1 1/2 teaspoons of salt. Also added a drained can of corn. Followed a reviewer's comment to only add 3/4 cup of instant barley instead of a whole cup. Very tasty and will definitely make again!

really great! I used the suggestions from another review (can of tomato sauce and worcestershire)and doubled all the veggies. Next time I'll only use 3/4 C barley.

This recipe was great! Very easy to make. Very nice on a cold winter night. I felt it used a little too much barley though, I'll cut it down a tad next time. A few substitutions: instead of water, I used mushroom broth. I also added mushrooms in the vegetable mix (who doesn't like beef and mushrooms??). Instead of raw tomatoes, I simmered a bit of tomato sauce and stewed tomatoes for a half hour before adding them (the same volume amount as required by the recipe). I always do this in soup when it asks for tomatoes – I find this adds a LOT more flavor than raw tomatoes.

Awesome!!!! My brother in law deemed this the best vegetable beef soup yet! I did add a can of tomato paste and I had used some steaks that we had thawed and didn't have time to make so I cooked them on the forman. So yummy!

This soup tastes fantastic. It is too easy to make (if that's possible). The only change I made was substituting tomatoe sauce instead of diced tomatoes, as kids don't like 'mushy' tomatoes in soup. Thanks for the recipe, it's now in my box.

Made this soup for the first time tonight. I found it exceptional. However, my wife found the amount of pepper a little too hot for her personal liking. Therefore, next time which will be very soon. I will decrease the amount of pepper slightly. I did however use whole peppercorns which I put into my mortal and pestle, along with the salt oregano and basil.

My first soup Ive ever made and it was a huge hit! I wish i would have made a bigger pot. I used a frozen mixed vegi (corn, peas, grean beans and carrots) cause I forgot to buy frozen peas. It still worked.
