This recipe was great! Very easy to make. Very nice on a cold winter night. I felt it used a little too much barley though, I'll cut it down a tad next time.
A few substitutions: instead of water, I used mushroom broth. I also added mushrooms in the vegetable mix (who doesn't like beef and mushrooms??).
Instead of raw tomatoes, I simmered a bit of tomato sauce and stewed tomatoes for a half hour before adding them (the same volume amount as required by the recipe). I always do this in soup when it asks for tomatoes – I find this adds a LOT more flavor than raw tomatoes.
