"It's easy for Judy Metzentine to fill her slow cooker and forget about supper...until the kitchen is filled with wonderful aroma, that is! 'I've served this soup often to family and friends on cold nights, along with homemade rolls and a green salad,' she writes from The Dalles, Oregon. For variety, she suggests substituting jicama (a starchy root vegetable found in the produce department of many grocery stores) for the potatoes."

1 pound lean ground beef
1 medium onion, chopped
2 cups cubed red potatoes (1/4 inch pieces)
1 cup chopped celery
1 cup diced carrots
1 cup dry lentils, rinsed
1/2 cup medium pearl barley
8 cups water
2 teaspoons beef bouillon granules
1 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
2 (14.5 ounce) cans stewed tomatoes

DIRECTIONS
In a nonstick skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5-qt. slow cooker. Layer with the potatoes, celery, carrots, lentils and barley. Combine the water, bouillon, salt and lemon-pepper; pour over vegetables. Cover and cook on low for 6 hours or until vegetables and barley are tender. Add the tomatoes; cook 2 hours longer.

Nutritional Analysis: One serving (1-1/2 cups) equals 241 calories, 5 g fat (2 g saturated fat), 17 mg cholesterol, 660 mg sodium, 33 g carbohydrate, 9 g fiber, 18 g protein. Diabetic Exchanges: 2 lean meat, 1-1/2 starch, 1 vegetable.

I doubled this recipe and cooked it on the stovetop. I omitted the lemon pepper seasoning and used fresh tomatoes instead of canned (about 4 or 5 large tomatoes, diced.)I added the cubed potatoes after simmering the rest of the ingredients for 45 minutes because I was afraid if I added the potatoes in the beginning they would be mushy. I think I ended up making almost 20 cups of this soup. I served it with fresh from the oven Parmesan Cracked pepper bread. It fed my whole family (which is rather large.) My kids all had seconds-and two of them had thirds. I also sent a container of this to my dad, sent some over to my sister, sent some with my husband to work for lunch, sent some to a family friend for dinner and gave some to my neighbor. All came back with rave reviews telling me how great this was! I served mine with sprinkled parmesan cheese on top, garnished with sliced avocado, a dollop of sour cream, and a sprinkle of chives. My family and friends absolutely loved this recipe! I think it will be a new fall/winter staple in my home.

I simmered the soup on the stove top for about an hour instead of using the slow-cooker. Then added the barley & lentils and simmered untill done about another 30 min. For additional flavouring I used half beef stock to half water. Overall, I think this is a pretty good, hearty soup. THX.

My hard-to-please husband adored this soup. I deviated very slightly to adjust it to ingredients I had on hand (left out carrots/celery) and it was still really good. Very easy recipe, simple ingredients, highly recommended.

This recipe makes a nice hearty soup. I made a few changes based on reviews: added garlic, used stew meat instead of ground beef, and substituted half of the water for beef broth. I accidentally added the tomatoes at the beginning of cooking, but it was fine. After 6 hours on low in my slow cooker the lentils were still al dente, so I turned it up to high for one hour and the texture was perfect. Will definitely make this again, my husband and dog really like it!

This is the best Barley Lentil soup I have had. I did use stew meat instead of ground beef but other then that I mad as directed. I will defiantly make this again. Thanks for the great recipe.

This was a healthy and easy soup to make. I added 2 bay leaves and garlic powder because it lacks a little flavor. Next time I'll leave the potatoes out since there's plenty of starch from the lentils and barley. I didn't have time to put it in the slow cooker so I cooked it on the stove top for about 45 minutes. The next time I try it, I'll use stew meat! I think that would be great. Good recipe.

This is a wonderful beef soup! I like to make a lot and freeze it in ziploc bags. Great for winter or anytime!

I made this in a Dutch oven on top of the stove-it came out excellent. An easy winter recipe. The leftovers were very good and thick also!

Good soup! I like that the ingredients are ones that you usually have on hand. I also added minced garlic to the meat and onions to add some extra flavour.

My husband deviated from this slightly -- nearly doubled everything but the meat and onions, and didn't use lemon pepper but used black pepper. We did need to add water when we re-heated the next day, as expected. It'll be a permanent addition to our rotation of soups. Thanks for the recipe.
