Beautiful Salad

“A spur-of-the-moment creation when I wanted something with a great flavor punch and lots of color, plus quick to prepare---this one fills the bill, with baby spinach and colorful cranberries and mandarin oranges, plus the crunch of sweetened almonds and the pungent feta cheese---a new favorite at our house! You may substitute blue cheese for the feta and any kind of sweetened pecans or walnuts, if desired, for the almonds.”

Very easy to make and nice colours. I took it to a potluck and got rave reviews even though it was a bought dressing and not much work. Nice to have a recipe like this every so often!

I loves salads like this but my husband usually skips them. My 2 and 3yo kids love it! I left out the red onion and the only honey roasted nut I could find was cashews. I used a raspberry vinaigrette instead of basalmic. Can't wait to have more for lunch today.

Very tasty and colorful salad. I replaced the almonds with plain walnuts and substituted reduced fat feta for a slightly less calorie-intense salad. Even so, I think it needed more spinach to balance out all those toppings. I'd go with more greens next time for less calories and more salad-y.

A great recipe! I used a raspberry-walnut vinagrette which turned out amazing! I would use less than a cup next time, though, since the baby spinach is fairly light and soaks up a lot of the dressing. But a nice, light, refreshing salad overall! My son and fiance were getting tired of the usual salads, and this went over well, even though they are not big green eaters!

This salad recipe is a keeper. It's also great w/ dried cherries, and raspberry vinagrette. Excellent any time of year, but I especially love it in the summer!

I make this salad a lot, using walnuts instead of almonds and a raspberry vinaigrette dressing. It is a wonderful blend of flavors and one of our favorite salads.

This was an excellent and refreshing change of pace! The only changes I made were using a bit of walnuts (less than a handful) instead of almonds and Earthbound's Organic "Herb" salad mix, instead of just plain spinach leaves. Newman's Balsamic Vinaigrette dressing. Perfect balance of sweet and tangy!

I use this for special dinners. Easy to assemble at the last minute. Very little prep. My only comment is to go very light on the dressing or serve on the side. I think with the moisture from the oranges it gets too wet very quickly.

Ok I am totally addicted to this salad. If you live in Canada, try it with President's Choice Maple Balsamic salad dressing. It's slightly sweet and compliments this salad perfectly. I highly recommend.
