"This is a lovely cheese sauce on toast. It was my mom's recipe. She used to make this when she had to feed a family of 9 with very few resources. However, I remember this as some of the best comfort food. Serve over buttered toast. For an extra special dish, we like to top it with a fried egg."

Directions

  1. Melt butter in a saucepan over medium heat. Cook and stir onion until soft, about 5 minutes.
  2. Stir flour and salt into onion until flour forms a paste, 1 to 2 minutes.
  3. Gradually whisk milk and Dijon mustard into onion mixture and bring to a simmer, whisking constantly until the sauce thickens, 5 to 7 minutes.
  4. Stir Cheddar cheese and white beans into sauce until cheese melts into sauce, 5 to 7 minutes.

  • Cook's note:
  • You can use Dijon or yellow mustard. Pinto beans can be substituted for the white beans.

I served this over toast with a fried egg on top, like the recipe suggests, and it was DELICIOUS! And easy to make! I used skim milk, as it was all I had, and it didn't seem to make a difference. This is definitely a keeper!

Lord have mercy! This is GOOD! I made it exactly like the recipe except I made twice the amount and used a mixture of pinto beans, navy beans and black beans. I tasted it to make sure its actually good, and finally stopped myself after the fifth big bite. This is comfort food and so tasty! We shall have it over hot biscuits.

I have made this several times. I love it, but it is definitely a folksy comfort dish, and so quick and easy to make. I gave it 4 stars because my teenagers will not even try it. Their loss - more for me.

This recipe was introduced to me by a friend and I fell in love right away. I like how easy it is to make and that it stretches easily to feed extra people. The leftovers also freeze really well.

Warm and rich. The fried egg on top is a nice touch. Not something you want to eat if you are trying to lose weight...but I'm not, so I had seconds!
