These black bean and corn quesadillas are really cheesy, a little bit spicy, and a little bit sweet. My vegetarian husband goes crazy over these every time! Feel free to play around and add chicken or veggies, if you desire. Don't forget the salsa and sour cream!

'When I get home late from work as an operating room nurse, I often rely on this handy recipe,' says Jane Epping of Iowa City, Iowa. 'Topped with salsa and sour cream, the crisp wedges are always a hit. when I have extra time, I add chopped onion, black olives and green chilies to the beans.'

I created this one night out of whatever I had on hand that I thought might taste good together--my husband thinks I'm a genius now! We named them 'cigars' because they're shaped like cigars, and if you blow into one end, smoke billows out the other!

Black beans, salsa, veggie broth and cumin are tossed into the blender. Transfer to a pot and heat until warm and bubbly. Serve with a dollop of sour cream and a sprinkling of green onion.

Barbeque Seitan and Black Bean Burritos

Cooked rice and barbecue sauce are combined with a heavenly mixture of cooked seitan, onions, scallions and hot, hot chili peppers. The filling is spooned into flour tortilla, and when all ten are wrapped and ready, they 're baked with additional barbecue sauce.

Cold black bean salad with a bite! It makes a great side dish for any Mexican or Southwestern dish. This recipe has become a healthy favorite in our family. Adjust the amount of serrano pepper to suit your spice tolerance.
