Great recipe! I used leftover steak, and added 2 stalks of green onion to the recipe; the 'heads' added to the bean, beef, and corn mix, and the green 'tails' chopped into the salsa. Turned out really yummy!

Quick, easy and pretty darn tasty. I had some fresh type salsa on hand so I just used that instead of what was suggested for salsa. Also added a dollop of sour cream. I will make this again.

Good quesadilla. I mixed the beans, salsa, corn, beef, cilantro, lime juice, diced jalapeno, and salt together and left it to marinate before I served with cojack cheese and baked at 425 degrees for 5 minutes.

Excellent way to use leftover beef. The directions were a little unclear, but common sense worked well enough to make these quesadillas very good.
