This recipe is fantastic. The perfect combination of quick, simple and elegant. I made three in a row and all turned out wonderful. I took this to a potluck style dinner and it was a complete hit. People were passing pieces around so everyone could taste some! (And these ladies can really cook, so the compliments were extra special.) Details on how I made it: I used real butter with the coconut. I whipped my cream by hand and made it nice and stiff. I let the sugar and strawberry mixture sit a little longer and used cold strawberries to cool the gelatin faster. I used fresh lemon juice. I must have used more strawberries than called for because my filling heaped up nicely which I think is better then a level pie. The gelatin gives the whipped cream enough solidity to not stick to clear plastic wrap when covered. Thank you for this recipe! :))

Really enjoyed this! I have been on a mission to replicate a creamy strawberry pie that I grew up eating at a local restaurant & while this is not exactly it, it is closer than I've come yet. I love coconut so the super easy crust was right up my alley & it was all very easy to make. My only issue was that the strawberries released a lot of water when they sat with the sugar and then when I added the water/gelatin mix there just seemed to be SO much liquid that I poured about half off before folding in the cream. I'm not really sure how differently it would've turned out if I kept all the liquid but it was great regardless, my guests all really liked it. I do wish the strawberry measurement was in weight instead of volume though I ended up just using about 1 lb of strawberries.

We like this pretty well. I don't like coconut so used the crust from Big Guys Strawberry Pie instead. I didn't have heavy whipping cream so I substituted whipped topping. I'm sure it would be even better with the whipping cream. I would make this again.

Great strawberry cream pie. I used a graham cracker crust and increased the whipped cream to 2 cups to cut down on the sweetness (and because my boyfriend came home with a pint of cream because it was a better deal than half a pint.)

Simple to make. I used 'cool whip' instead of real whipped cream to cut back on calories and it was fantastic. My friends (mostly all dieting) said 'heck with it, we want seconds!

Amazing! If I could give this six stars I would! Ordinarily I'm not a huge fan of coconut, but this combination was just perfect. I made it for Easter and it was a huge hit. I did find that the coconut crust was a little thick for my taste, but this is easily fixed and may just be a personal preference

Very good! The crust was a bit too much for me. The next time I make this I will try either a graham cracker or Oreo crust. I will make it again!

It wasn't bad, but was not nearly the best I had. In fact, I think the strawberry topping would be better with mixing the strawberries with powdered sugar (instead of granulated), then just mixing that with cool whip. No need for the gelatin. I made this for my Jewish friends over Passover, so the crust was perfect for that.

Delicious filling! Best made & served same day - crust gets soggy on day #2 (but still tastes good!) Next time I will make one exactly like this recipe, and one with the crust from the "Big Guy Strawberry Pie" recipe for the few crazy family members that don't like coconut.

Always wonderful! Made several times for different occasions, and popular every time! The coconut crust is soooo yummy and different. Am always asked for the recipe. Looks and tastes very fancy, but relatively quick and easy to make. Definitely a keeper!!!

This was really good when made with some fresh-picked strawberries. The texture was a little more gelatin-like than fluffy, but you can't really go wrong with whipped cream and strawberries.
