"Basic syrup for Sunset Cooler. The pandan leaves, also known as screwpine, can be obtained from Asian shops. We only use the leafy part and not the green liquid derived from the plant after pounding for coloring food. The leaves gave a beautiful fragrance for the syrup."

Original Recipe Yield 1 1/3 cups
 

Ingredients

  • 1 cup white sugar
  • 1 cup water
  • 2 pandan leaves

Directions

  1. Place sugar, water and pandan leaves in a deep saucepan. Bring to a boil, lower heat and simmer until sugar is dissolved.
  2. Remove pandan leaves and strain the syrup. Allow to cool for use as a basic syrup. Store the syrup in a bottle in the refrigerator.
