Original Recipe Yield 1 8 1/2x4 1/2 inch loaf
 

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup shredded apple
  • 3/4 cup chopped walnuts
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 4 1/2 x 8 1/2 inch loaf pan.
  2. Mix flour, baking powder, soda, salt, sugar, oil, eggs, apple, walnuts, and vanilla only until dry ingredients are moistened.
  3. Bake in greased 4 1/2 x 8 1/2 inch loaf pan at 350 degrees F (175 degrees C) for 35 to 40 minutes.

  • One cup of any type shredded fruit or vegetable may be used in this recipe. Depending on what you use, you may need to add some water to the mixture. We suggest adding only 1 tablespoon at a time, just until ingredients are evenly moist.
