This crepe batter is really, really good! I mixed the dry ingredients in my stand mixer with the whisk attachment, then poured in the milk, water, & 1/2 t. of vanilla all at once, mixed it well, and then added the eggs and mixed well again. It blended wonderfully and I only had a few tiny specks that didn't mix that were settled at the bottom of the bowl when I was done pouring & making them. I did take another reviewers advice on adding the vanilla and 1/3 c. of sugar, but it was a tiny bit too sweet after we put our strawberry filling inside and the sweetened whip cream on top. They were so good I decided to make more for the next day and some to freeze, so I made the recipe again, doubling it, and only used the 1/3 c. for both instead of each, and that was perfect for us. These were great! :) (I just wish they were faster to cook! lol)
