Great soup! I sauteed the celery, onion, carrots and garlic (3 cloves) in butter for about 15 minutes, then added to the soup. I also added an additional 1/8 tsp. celery salt. I never added ground allspice to my soups before and it was a great addition. We loved this soup and I plan to make it again!

I used water instead of stock. Next time I will use the stock - not enough flavor. Also save white turkey meat to add into it. I didn't get enough meat from the bones.

Good use for the leftover turkey. I used veggie broth instead of chicken broth but otherwise followed the recipe. Very tasty.

Our Thanksgiving turkey was cooked in a pit and my kids got carried away with the rubbed on seasoning. So I used this recipe but didn't have to use any seasonings except a pinch of tarragon and some parsley. There was a lot of juice in the turkey bag so I used that for the turkey soup base plus added as much or more water. The juice had been refrigerated and fat removed. I also added a little beet greens and stems and mushrooms. Yum.

This soup is really good! Be careful with the pepper - I initially added way too much and had to start again - but turned out great - and for an added pop - try a doppop of sour cream! Yum!

Instead of chicken broth, I used homemade turkey broth from the leftover bones. It had good flavor, but I thought there was too much barley. Next time, I'd cut it to half a cup.

Wow! I used a leftover turkey carcass to make stock and used some for this. This is delicious; I do agree that it needs garlic.

Very good! I have tried with leftover turkey and another time with 3 chicken breast. I put raw cubed chicken in the broth and it was done in 30 minutes.

This was a great soup - the flavors were really rich and tasty. As some other reviewers suggested, I sauteed my veggies first, and also added a potato and a little bit of garlic. My family loved it so this will be a keeper!

This was a really good base to work off of. I put three large cloves of garlic in with the carrots and celery cooked before I added the broth. I omited the onions because I'm allergic. Used others suggestion on tyme and sage. Didn't try the lemon but it sounds yummy....

The flavor of the soup is great. However, I took another's recommendation and doubled the barley. Unless you like soup with more substance than broth, I don't recommend it. I did add extra thyme and sage and was happy with the outcome.

This is delicious, and easily versatile...you can tweak it to become beef barley soup by substituting beef stock and cubed beef for the chicken stock and turkey, and achieve similar results. We doubled the barley in the recipe because we like a lot, and added some shredded potato. Very yummy!

I knew I wanted to make turkey barley soup but wanted some ideas for seasoning. This recipe was fine as a base. I tweaked it by first sauteing the carrots, celery and onion in oil along with several cloves of garlic before adding the remaining ingredients. I also increased the thyme to 1 tsp and added 1/2 tsp ground sage. At the end I added the juice of 1 lemon. It turned out delicious and my whole family (2 adults, 3 kids) scraped their bowls clean. A great use for leftover holiday turkey!

This was a pretty good soup. I had to make some minor adjustments, I didn't have Thyme so I didn't add it and I added cubed potatoes just cuz I like them. I was a little nervous about the allspice but it really added a nice flavor. My husband liked it and my 2 yr old ate it, however my 4 yr old refused to even come to the table to try it.
