We loved this one. I made the following changes though: 1. I added 6 oz crimini mushrooms, sliced; 1/2 can of corn 2. I used vegetable broth 3. I fried the veggies, removed them from the pan as I didn't want them all mushy 4. I fried the barley with 4 cups of veggie broth, and when almost done, I turned off the pan, removed the remaining broth, added the veggies and mixed it all 5. I added all to a corning ware dish, added chese on top and put in in the pre-heated oven at 425F for 10 min 6. I sprinkled fresh cilantro on top after I removed it from the oven. Yummy!

My kids all gave this a 4. Nice hearty vegetarian dish. Next time I will leave out the beans and add a shredded rotisserie chicken to the mix.

I've been looking for 3 years for a barley casserole recipe "just like Aunt Cathy's" to satisfy my husband. Just made this tonight, as listed, except left out the parsley (didn't have) and substituted 1/2 diced onion instead of the green onion (just preference), and it was a HUGE hit!! For those reviews who say the recipe lacks flavor, this recipe lacks the instruction that is included on the barley packaging - barley MUST be pre-rinsed to remove excess starch. If you do not pre-rinse (and fully drain), this can have a significant impact in final flavor, because the starch (if unrinsed)minimizes/mitigates the flavors intended. Excellent recipe! When I try new recipes, I ask my husband: Is this 1 month, 3 months or Never, to repeat (that's our scale of 1-10)? He meekishly looked at me and said "can we have it weekly?" LOL Answer: No. But obviously this is a keeper and will be recycled frequently.

This was exactly as it was purported to be and it wasn't a bad side dish. I loved the texture of the barley and (for barley), it got done pretty quicky this way. I added a tiny bit of sour cream (1/2 tsp or so)and extra black pepper so my personal serving and thought it was good that way. We also served it with baked chicken breast. Ultimately, my family declared it "soup without the soup," and we would probably just make a soup out of it next time, but that's just a preference of our household.

Awesome flavor and chewy, perfect alternative to rice. Made as directed, came out a bit too salty. Could omit the salt and use reduced sodium chicken broth next time. Otherwise, love everything about it. Trying to eat more vegetarian dishes and the kids ate it without any complaints. Looked, smelled and tasted great!

Delicious! I didn't have green onions and it still turned out great and was very filling. I did add some frozen veggies and it needed a little longer to cook, probably because of them. This is going into the rotation.

I made as instructed. I had served this with a side of grilled chicken breast. This recipe is delicious! My 20 month old son also loved eating this and he's a picky eater.
