I've been looking for 3 years for a barley casserole recipe "just like Aunt Cathy's" to satisfy my husband. Just made this tonight, as listed, except left out the parsley (didn't have) and substituted 1/2 diced onion instead of the green onion (just preference), and it was a HUGE hit!!
For those reviews who say the recipe lacks flavor, this recipe lacks the instruction that is included on the barley packaging - barley MUST be pre-rinsed to remove excess starch. If you do not pre-rinse (and fully drain), this can have a significant impact in final flavor, because the starch (if unrinsed)minimizes/mitigates the flavors intended.
Excellent recipe! When I try new recipes, I ask my husband: Is this 1 month, 3 months or Never, to repeat (that's our scale of 1-10)? He meekishly looked at me and said "can we have it weekly?" LOL
Answer: No. But obviously this is a keeper and will be recycled frequently.
