This is a good recipe. My family and I enjoyed it. I've made it with both 1 lb of meat and 2 lbs of meat. It's fine either way. Using 1 lb makes this a very budget friendly meal. I only use 2 boxes of corn bread mix it would over flow if I used more than that. I like my cornbread moist so I always mix in at least 1/2 cup of prepared mashed potatoes into my corn bread batter. Since I used 2 boxes I mixed in a full cup of mashed potatoes. It makes a big difference.

I wish there was a 4 1/2 stars. My husband and I LOVED this recipe! I was pleasantly surprised. And it's so easy, that I have it memorized, which is a huge bonus. The only thing I would change is the cornbread, I think one package will be plenty. I love lots of corn bread, but I had a really hard time cooking it all the way through. So the next time I make this budget friendly meal, I will be using just one package of cornbread mix. Thank you so much for an easy, delicious recipe.

I liked the flavors of this recipe, but it came out a little dry. A little more BBQ sauce might have made a difference, but overall I would probably do this again -- with some changes.

I probably won't make this again. Doesn't specify what kind of BBQ Sauce to use. I used Kraft Original but it turned out waaaay too sweet. My husband and kids would not eat it either.

Hubby did not like ALL that much, I used a cup of BBQ sauce and he felt it needed more. 2 boxes cornbread mix is enough.

I found this hard to rate, as my husband and I like it, but the kids wouldn't touch it.

Really would have given the meal a 4.5 or 5 but only gave it a 3 because of all of the modifications I made. I added a can of red beans, as well as celery and salt-to-taste to the ground beef. I also added about a 1/2 teaspoon of red pepper flakes, 1/2 teaspoon of pepper, and 10 dashes of tabasco sauce to spice it up a little. Gave it more of a chili vibe. Also, I added shredded colby-jack cheese to the top of the corn bread. Next time I might add some cheese to the ground beef mixture right before putting it in the oven. I did use 3 boxes of corn bread mix. Although I liked the massive amount of corn bread on top...we're talking about 2 inches of corn bread on top, my husband thought it was a little too much. Next time, I think I will try 2 boxes instead. Overall, with all of the changes, it turned out great. Will definitely make again since it was a really easy and convenient recipe.

i added Worcestershire sauce, garlic and extra 1/2 cup bbq sauce. I tripled it for a big crowd and everyone loved it! I did use my own cornbread recipe instead of a box though.

Very tasty, simple, and inexpensive! I halved this recipe (only had one lb of gr. beef to use) but I still used the whole green pepper because it needed to be used up, and I also used the full cans of corn and tomatoes because I didn't want to have 1/2 cans sitting in my fridge. Also I used the full 1/2 cup of BBQ sauce even in the half recipe since so many reviews said to double it, plus I didn't drain the tomatoes. Many people said there was too much cornbread, so in my half recipe I used only one package, but I think it could have used more so next time I'll likely use 2 packages. My picky husband liked it, and so did I. :)

I used 1 cup of BBQ sauce, added a can of kidney beans and put a layer of sharp cheddar cheese between the meat layer and the cornbread.I also only used two boxes of Jiffy Corn Muffin mix. I think it would be good with creamed corn in the cornbread to make it a little more moist and we love corn! The only negative review was from someone that doubled the sauce and halved the meat. Go figure! This recipe is so easy and delicious! Great leftovers for lunch too.

Wonderful! I kind of eyeballed the amounts based on the reviews, and made a batch of cornbread off the cornmeal box. I cooked the whole thing in my deep 8-inch cast iron skillet, turned out wonderful! Thanks for a great recipe--

I know we're in the minority, but my husband and I did not care for this at all. I made it with one pound of hamburger (all I had) and two boxes of corn bread mix (yes, I made too much) and added the one cup of BBQ sauce. Not for us, but you can't please everyone!

I thought this recipe was really good! My husband liked it also. I took others advice and added some worst. sauce and garlic powder to the beef, and drained the beef before adding the vegetables. I didn't drain the tomatoes.. kept liquid. I also used 1 whole cup of BBQ sauce, and used 2 boxes of Jiffy cornbread mix. 2 boxes was perfect. This recipe made a lot, will have leftovers:) Turned out great, definitely will keep this recipe.

This was really yummy and inexpensive! I cut the recipe in half, left out the bell pepper (personal preference), definitely drained the grease before adding the veggies and ended up only using 1/2 a package of cornbread mix since i didn't want a very thick breading on top. Not sure exactly how much bbq sauce i used, i just kept adding more until i liked it. Very good, will make this again, thank you!

This is a great family pleaser, even my kids loved it! I did cut the recipe in half (except bbq sauce) and added a layer of shredded cheese between the meat and cornbread. This recipe can easily adjust to ingredients you have on hand.

This is a delicious and easy dish! I added 1 cup of BBQ sauce following the advice of other reviews. I also addes 1 can of diced tomatoes with green chilies along with the other can of tomatoes. It addes a little spice. I did not drain either can. The juices soak up into the cornbread. YUM! I only used 2 packages of cornbread mix. I added a can of creamed corn to the mix. It makes the cornbread a little more moist. I will definitely be making this again. :O)
