Barbecued Chicken Salad Sandwiches

INGREDIENTS
1 1/2 pounds skinless, boneless chicken breast halves
1/2 cup barbecue sauce
1 cup mayonnaise
1/2 cup finely chopped onion
1/2 cup chopped celery
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
8 Kaiser rolls, split
8 tomato slices
8 lettuce leaves

DIRECTIONS
Place the chicken in a large resealable plastic bag; add barbecue sauce. Seal the bag and turn to coat. Refrigerate overnight.
Grill chicken, covered, over medium-hot heat for 6-8 minutes on each side or until juices run clear. Cool; cover and refrigerate chicken until chilled.
Chop chicken; place in a bowl. Stir in the mayonnaise, onion, celery, salt and pepper flakes. Serve on rolls with tomato and lettuce.

This is a way to make chicken salad different. I too baked my chicken in b-b-que sauce and even added a little to the chicken afterwards. I only made half so froze the other cooked chicken for later and that worked great.

This was really good even though we didn't marinate the chicken overnight. We brushed the chicken w/bbq and then added more to the mayo mixture. Even still, it was really good; a definite keeper.

Made this to bring in lunch for co-workers and everyone loved it...including me. It was very easy to make. I baked the chicken in the BBQ sauce instead of grilling it.

i thought it lacked flavor- doubt i will make again- too much work for bland chicken salad___ NOTE- just had left overs for lunch- had the flavor today!

We love this recipe! Simple but very good. We eat it every other week in the hot summer months. I usually just put the chicken in the slow cooker with the BBQ sauce to save time. Thank you so much!

I didn't have quite enough mayo on hand so I substituted a little blue cheese dressing,omitted the salt,celey and red pepper flakes and it was still amazingly tasty.Can't wait to try it with all the ingredients.

My husband loved this. Such a nice change from the old-fashioned chicken salad, and I can make a lot of it ahead of time. I used pre-cooked sliced chicken fajita meat as a time saver.

I thought this was just delicious. Usually I cannot have chicken salad because of nuts, but this one was just wonderful! I also added shredded cheddar and bacon to the mix which really punched it up!
