Directions

  1. Preheat and lightly grease a waffle iron according to manufacturer's instructions.
  2. Whisk brown rice flour, teff flour, walnuts, rice flour, brown sugar, baking soda, and baking powder together in a bowl. Beat milk, bananas, eggs, yogurt, oil, and vanilla extract together in a separate bowl. Stir flour mixture into banana mixture until batter is just mixed.
  3. Pour 1/4 to 1/2 cup batter into the preheated waffle iron; cook according to manufacturer's instructions until golden brown, 5 to 10 minutes. Repeat with remaining batter.

I tried this recipe with one change as I didn't have any teff flour and never heard of it until seeing it in this recipe. I used corn meal and almond milk. Sprayed the waffle iron with "Pam Baking spray" and the waffles came out very good. They were a little crumbly but had a delicious taste and nice and brown. Maybe the Teff flour would help them hold together better?
