I made this for my daughter who is sick...I don't think it made her feel better but it sure lifted her spirits! I had some too and it was tasty! I think we will make it again sometime...I want to add to the person bellow who said the bananas went brown...well of course they did! they are bananas, and just like avocados if they are exposed to air, they will start going brown...

Quick and easy to make. We had a bit of leftover rice from dinner and this made a great dessert.

This recipe tasted great when first prepared. However, it did not store well at all, not even overnight -- the rice hardened and the banana browned (as did the rest of the pudding). If anyone knows of some tricks to prevent these two issues, then you've got yourself a great pudding. Otherwise, enjoy as soon as you prepare it, or don't waste your time.
