Banana Rice Pudding

Ingredients

  • 1 cup hot cooked rice
  • 1/3 cup sugar
  • 1/3 cup whipping cream, whipped
  • 1 large firm banana, sliced
  • fresh mint

Directions

  1. In a bowl, combine rice and sugar; mix well. Cool completely. Fold in whipped cream and banana. Cover and refrigerate until ready to serve. Spoon into serving dishes; garnish with mint if desired.
