Moist, not too sweet. Nice texture with the oats. Slightly dense like a bran muffin, not super light and cakey. I ran short on bananas, so I made these with 1/2 c. mashed banana and 1/2 c. peeled and chopped macintosh apple - yummy! They stayed moist for days, even when I put the extras in the refrigerator. With the amount of batter this recipe makes, it looks like the muffins will overflow the 3/4 filled paper-lined muffin tins and make a mess when they rise, but they don't. The finished size and shape was perfect. Although I didn't give the recipe four stars as the best ever, the muffins were better than average and I'd make these again.

Perfect hearty breakfast muffin, with just one change- whole wheat flour. I debated leaving in a bit of the all-purpose flour, but then decided to make these muffins completely whole-grain. They were delicious; moist and yummy! Great healthy breakfast muffin!

very moist and yummy. Made some substitutions. Instead of rolled oats, I used steel cut oats. I took a cup of steel cut oats and little more than a cup of cold water to a pot, brought to a boil then cooled. I also added some flax seed and dried apricots and cranberries. Since I used steel cut oats, I let the batter sit for 15 minutes in my fridge to help soften up the oats. Really dense and full of flavor. Next time I might substitute sugar in the raw and try yogurt instead of the oil.

I made this into muffins, it made 20. My almost 3 year old has come back for thirds and she is the pickiest eater ever!!! I'll definately be making this again!!!

these were good--just need a bit more sweetness, so maybe a sprinkle of course sugar on top before baking would work. might make them again using the other suggestion of mixing brown & white sugar & see how that comes out. i also used the suggestion of using 1/2 wheat flour, as i love to use it whenever i can. it was definitely an easy recipe, though, so i like it for that :)

Delicious, moist, and healthy muffins! Instead of the oil, I added an apple that I tossed into the blender. I also threw in a cup of dried blueberries. They were barely out of the oven and I was already halfway through them. Thanks for the great recipe!

Great base recipe. Used half whole wheat, half white flour. Used brown sugar instead of white. Used soy milk instead of cow's. I didn't have enough bananas, so I used apple sauce to get up to a cup of fruit. I then also tossed in a few other things I wanted my daughter to eat :), like some wheat germ and some quinoa cereal that had dried fruit in it. All worked like a charm - they were great! My husband and I ate way more than my daughter!

THESE ARE AMAZING!!!!!!!!!!!!!!! The only thing i changed was i used half oil and half applesauce and added a little cinnamon. They WERE PERFECT.

the kids loved these I add a scoop of vanilla protein powder to my flour cup and use the remainder of the cup for flour - it adds protein and doesn't not impact texture or flavor in any way

I doubled the batch and made these with applesauce instead of oil, whole wheat flour instead of all-purpose, 1 egg and 2 egg whites and half the amount of sugar. They became a fantastic healthy low fat muffin!

My 3 kids loved these~great quick breakfast ! they were very easy to make and it was a great way to used up those ripe bananas P.S. i changed the recipe just a tad and did half applesauce and half oil and they still were yummy !

OH MY GOODNESS!! This is sooooo good. They came out moist and fluffy and oh, so delicious! To make it healthier,I substituted the oil with apple sauce with strawberries (I did not have the plain apple sauce). Yum!!! Yum!!! Yum!!!

These were really yummy. I did half white and half whole wheat flour. I also used half white sugar and half brown. I added in a tsp of cinnamon and cut baking powder to 1 tsp too. I also decided to throw in a half cup of mini chocolate chips, mmm.

I have said it about banana muffins from this site before but these are my new favorite muffins! I believe its the addition of milk that makes them but they are fantastic. I made no real changes but I did add chocolate chips & shredded coconut (which is a tip from my other favorite receipe on this site). Next time I will make sure that I have applesauce to add for part of the oil but these are great as is... I plan to make these many more times.
