No matter what I did.. all I could taste was the corn bread. I did everything right and maybe this is the way that it's supposed to taste. I guess I had the idea that it would have a more natural banana taste and it just wasn't there. The taste was disappointing. :(

So goood!!! I was actually looking for an easy banana bread recipe. I made muffins and added a couple tablespoons of honey for sweetness. I can't believe how amazing these taste! I didn't mash the bananas ahead of time. I just cut them into small pieces and mashed them into the corn bread mix. It turned into a nice batter. I halved the recipe and added water since that's the kind of cornbread I had on hand.

This was what I would call interesting. Not a combination that I would have come up with, but actually quite tastey. It most deffinately is a "stick to your ribs" kind of bread. Very dense. Best when warm.

This banana cornbread tasted pretty good, but it had a really thick crust.

Quick and easy. The banana adds great moisture. I halved the recipe and cooked it in an 8x8 baking pan. Also works great for muffins. I usually don't put the nuts in. The kids love these.
