Banana-Nut Chip Bread

Ingredients

  • 1 1/2 cups mashed ripe banana
  • 1 1/4 cups sugar
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 3/4 cup quick-cooking oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 cup semisweet chocolate chips
  • 3/4 cup chopped walnuts

Directions

  1. In a mixing bowl, beat bananas, sugar, eggs, oil and vanilla. Combine the dry ingredients; stir into banana mixture. Fold in chocolate chips and nuts. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 350 degrees F for 55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
