Love the recipe, We have alot of food allergies so I put in apple sauce instead of egg and oil instead of butter. everyone loves it.

Made these and they turned out amazing... I've made bananas muffins a hundred and for Some reason this recipe just rocked... Will make these again... If fact I think I will go buy Bananas just let them ripen so I can make these...

I added 1/2 teaspoon of vanilla and a sprinkle of nutmeg. I also filled each cupcake compartment almost to the top, for larger muffins. It helps to put the bananas the freezer to hasten the ripening and add a fresh one for maximum banana flavour.
