After a few "enhancements" these are the perfect, healthy & kid-friendly muffins! Use half whole wheat, half white flour. Cut down sugar to 1/2 cup. Omit butter, substitute applesauce, add 1/2 cup ground flax seed. Like other folks, I added cinnamon & vanilla. Sprinkle with diced, toasted pecans & lightly sprinkle with cinnamon & sugar before baking. Easy, quick & delicious! Our family's favorite muffin recipe!

These muffins were great!! I added chocolate chips cause it's chocolate and it makes them so much better. Plus I added one more banana and cut the sugar in half. Very tasty, everyone loves them.

Yummy! I just made 48 mini muffins and they are a big hit with my kids. I think next time I will double the recipe and freeze half for later. Thanks for the great recipe.

My four year old helped me make these with great success (the help and the results). I followed the advice of previous reviewers and added 1 tsp of vanilla, 1 tsp of cinnamon, and 1/4 tsp of nutmeg. I used two ripe bananas and one not-so ripe banana (that's all I had) but it turned out well because the less ripe banana left small little pockets of banana in the baked muffin. For us, this was exactly enough for 24 mini muffins; the baking time (with a completely preheated oven) was closer to 20 minutes. Perfect - I couldn't stop eating them!

I was looking for a good, basic banana muffin base recipe, and this was the winner. The muffins were just right when I made them according to directions, without changing a thing. They were even tastier the second time around, when I added cinnamon, walnuts, and 1/3 cup of mini chocolate chips/white chocolate chips.

To make this a little healthier, I changed the recipe slightly. It comes out PERFECTLY and I'm still amazed at how good they taste. Instead of 3 bananas, I use 4 large bananas. I use only half of the butter that the recipe calls for (still melted) and also add 1/2 cup applesauce. I use 1/4 C. Splenda and 1/2 C. sugar, add 1 t. cinnamon, 1 t. nutmeg, 1 t. vanilla. I use the very large silicon muffin cups and bake at 35 for exactly half an hour. They turn out perfectly every time

A great way to use up old bananas. Like other reviewers I added some vanilla and a bit of cinnamon. I also halve the butter and make up the rest with applesauce.

These were so good. Nice and moist and flavorful. I added spices and frosted them because I served them to the kids for dessert. These would be excellent brunch muffins minus the frosting I added. I think nuts would be really good too. Love recipes that help you use up your bananas that are getting sort of old. Thanks for the great addition to my recipe collection.

I have never had success w/ baking before. I did this repice yesterday and followed others suggestions adding the 1tsp vanilla, 1tsp cinnamon, 1/2 tsp nutmeg, 1 cup crushed pecans and I addded a bag of white chololate chips. I also put a half pecan on the top of each muffin to make it look pretty. It was a hit. My step daughter who is a picky eater wants to make them again today. My husband took a dozen to work and they were gone in seconds, people were asking for the recipe. For someone who can't bake, this recipe made me a star!. They were moist and had the big tops just like a bakery. Thank you.

These muffins are great! I was looking for a recipe to use up a few bananas that were a little more ripe than we all like to eat here in the house. This was extremely easy & with ingredients that I already had. Like many other reviewers, I also added 1 tsp. of vanilla, 1 tsp. of cinnamon, and 1/4 tsp. of nutmeg to the mix. They were moist, delicious & flavorful. Thank you!

Very very good! I added a bit of vanilla extract and cinnimon as another reviewer recommended and they came out so yummy!!! I have to add though, that regular sized muffins only cooked for 20min at 375, or 15 min at 350, and they came out perfect. It also makes more than 12, which I'm thankful for! I made 20 regular sized muffins with the 12muffin recipe.

I didn't think these were that great. No one complained about them, but no one raved about them either. I did add vanilla, nutmeg and cinnamon but I still found them to be a bit bland.
