INGREDIENTS
2 eggs
2/3 cup sugar
1 cup mashed bananas
1 3/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup mixed candied fruit
1/2 cup raisins
1/2 cup chopped walnuts

DIRECTIONS
In a mixing bowl, beat eggs and sugar. Add bananas; mix well. Combine the flour, baking powder and salt; gradually add to egg mixture. Fold in fruit, raisins and walnuts. Transfer to three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350 degrees F for 30-35 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Editor's Note: Bread can be baked in one 9-in. x 5-in. x 3-in. loaf pan for 55-60 minutes.

My mother and I made a batch of these last night. We used a cup and a half of dried mixed berries in place of the fruit and raisins. The first batch came out a little dense (maybe we goofed somehow) and looked a little flat coming out of the oven, but the more we "taste-tested" it, the better we liked it. The mixed berries were scrumptious and probably a good substitute for the candied fruit. I haven't tasted the second batch, but they looked fluffier and lighter than the first. So I have a new Christmas bread recipe to play with! Thanks! :-)

This is very good. It is moist and flavorful. It baked in exactly 35 minutes in the small loaf pans, came out of the pans perfectly, and are very pretty when cut. I used only red and green candied cherries and the raisins. Good gift!
