Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 7/8 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon banana extract
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1/3 cup chopped walnuts, toasted

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper.
  2. In a medium size mixing bowl, sift together flour, baking soda and salt. In a separate small bowl, combine 2 tablespoons brown sugar with cinnamon, set aside.
