Directions

  1. Beat banana and lemon juice in a bowl with an electric hand mixer set to Low until completely mixed.
  2. Beat butter into the banana mixture until creamy.
  3. Beat confectioners' sugar into the banana mixture in small batches, beating continually, until entirely integrated into a light and fluffy frosting.

Mine never thickened up and was more like a glaze then frosting. Will try again and maybe not let me bananas get as ripe. The flavor was good though and everyone enjoyed what little did stay on the cupcakes.

Great recipe! I did add some vanilla and 3 TBSP of cocoa powder and used less sugar (judging the consistency as I mixed it).

Like this recipe. It has only a slight taste of banana. The consitance was thin but after I had refidgerated it for a while it was fine. The next time I make this I will whip the butter first before I had the banana and lemon juice. Should mix better also if I can find some banana extra will add as well to bump up the banana taste.

Followed directions to cream everything first, then add banana. Tasty but stuff NEVER got thick. I even chilled, frosted then chilled again... so sloppy. Tasty, but too sloppy. Maybe good for a filling?
