This is a fabulous recipe, I substituted the butter for applesauce and reduced the sugar to keep it low fat and healthier. I also put in a bit more banana and it's so moist, I love it!

I've used a lot of banana bread recipes over the years and I have to say this is one of the best. It has a lighter texture than others I've tried and I found that a nice change. I did use some of the suggestions of others and added more banana and 1 tsp. of cinnamon. Also, I like to use the mini loaf pans instead of the large ones. I baked them for 45 minutes and they came out perfect. It was delicious just after it came out of the oven but even better the day after. All the flavor seemed to pop. I'll definitely make this one again!

My co-workers worship me each time I bring this into the office. I usually omit the walnuts and instead add about 3/4 of a cup of flour-covered milk chocolate chips for an extra treat.

Texture wise it was very soft and moist - perfect! But it could have done with a lot more bananas. The banana taste was barely noticeable. My family polished off the whole loaf and then was surprised when I asked them "so how was the banana bread?"!!

This is a super easy, goof proof recipe. It always turns out right. That is saying something from a person who normally makes dry loaves of banana bread.

My husband is my best critic for breads and he absolutely loved this bread! Very moist and simple to make. I make it every time we have overripe bananas.

I used real butter instead of margarine, and I doubled the amount of banana. Very moist and tasty. I did put the walnuts in the batter. Very good recipe!

Great recipe! I wanted something a little different, so I added 1/2 cup chocolate chips and 1/2 tsp cinnamon. I also substituted 1/2 cup Splenda brown sugar instead of the white sugar and used egg beaters in place of the eggs.

I had some over-ripe bananas and thought I'd make a few mini loaves to give away to neighbors (since I, myself, don't care much for banana bread). Well, the loaves turned out so beautiful and smelled so great that I couldn't resist trying a piece. I ended up surprising myself my eating the whole mini loaf! I still had 2 to give away and both neighbors asked for the recipe! Yum, yum!

First time I made this, I read all the reviews, made a few of the suggested amendments, forgot the milk and it was heavenly. SO this time I made it by the letter but the batter overflowed from the tin about ten minutes into baking & burnt little pancakes all over the bottom of the oven. No idea why this might have happened, except for the addition of milk. Transferred it into a pizza pan to finish baking and now have a banana pizza cooling on the side!

I have been baking banana bread since I was very young and love it today even more because of this recipe! This is by far, the BEST banana bread I have ever made or eaten! Way to go! I upped the salt to 2/3t. and the banana's to around 2 cups though 1.5 cups would have probably firmed it up just a tad. Love it! Oh, if you use the temp method for determining if it is done just note that mine was golden brown and 190 degrees F but the ver center of the loaf was still uncooked. The rest was excellent. Just make sure you do the old time toothpick or butter knife test! Thanks!

To make this a little healthier, I used whole wheat pastry flour instead of all purpose. I also used 3/4 cup of pure maple syrup instead of sugar. It was moist and very filling.
