Thank you, Pat, for a wonderfully adaptive recipe! I used it as my inspiration yesterday. It's a very basic and forgiving recipe that allows for all sorts of adjustments as you need to (or see fit to) do. My adaptations gave excellent results. I only had 3/4 cup of mashed banana so I added another egg to add additional moisture! I also used 1/2 cup each of white and brown sugar, I added a heaping 1/2 tsp of cinnamon, and added 1/2 tsp vanilla extract. I used 1 heaping Tbsp of sour cream and milk (lactose free, 2%) to equal 1/3 cup liquid. I added toasted walnuts and chopped them very fine to add to the batter. Rave reviews from family and friends.

This is a great bread. I subbed 1/4 c. applesauce, 1/4 c. butter. I also added the vanilla and 1/2 tsp. vanilla. I also added about 1/3 c. peanut butter chips. I made it into 15 muffins (1/4 cup batter) and my kids loved them!

My husband enjoyed this banana bread. I made one loaf and two big muffins out of the batter. I used half white sugar, half brown sugar and added a tsp. of cinnamon, a half tsp. of nutmeg and used two medium eggs.

Easy to make, very moist and delicious! We left out the walnuts (since we don't eat nuts) That was the only thing we changed, and it came out perfect! Yummy;)

this recipe is really great. its probably the best banana bread ive ever made. plus its super easy. 5 stars! one thing i changed was i added abt one third cup honey (the rest sugar). amaazing with coffee!

This is a great recipe. I have been testing out several unsucessful recipes, when I came across this one. I used it because this was the only recipe that used one egg - and that was all I had on hand. I too used the 1/2 cup brown sugar and 1/2 cup white and added the vanilla essence and cinnamon. I baked for just over 60 mins, then let it sit 5 mins in a turned off oven, It came out tasting perfect, delicious. It did break up a little, but otherwise the texture and moisture content was just right.

I doubled the original recipe exactly to make a larger batch. They turned out pretty bland even though I added plenty of cinnamon and nutmeg. It was not as dense as I thought it should be, and not banana-y enough. I would have used a lot more banana. I think I'll just stick to the recipe "Banana Banana Bread" from now on...

Very Good! Everything I Love about Banana Bread, dense, pronounced Banana flavor, very moist! I will use this one again! I madeca few changes; added vanilla, added nutmeg,added cinnamon and used half white sugar, and half brown sugar!

Very good! I added a little extra banana and decreased oil to 1/3 cup, added half brown sugar and half white sugar, and used whole wheat flour. I also wrapped tin foil over the top of the pans after I took them out of the oven, and let them sit for a half hour to lock in the moisture. Delicious!

It tastes good, but since I didn't follow everything in order, I goofed and didn't add any baking powder. (I creamed first and then added the dry ingredients)...then again, the ingredients aren't in order of how they're added either, so it's not entirely my fault. I did add some dashes of cinnamon, nutmeg, and cloves because I do like spice in banana bread. Otherwise, it's a fine recipe. I let my mixer "mash" the bananas when I added them, so it's kinda chunky banana (I used 3) & that's wonderful! My husband bought the bananas specifically for banana bread, and now he's out of town...I don't think he'll be back to have any!
